Pablo Armando Aranda Moreno, appointed new chef at El Olivo

This young yet experienced chef, who is passionate about km 0 cuisine, has already taken the reins of the popular restaurant by joining the hotel's gastronomic team led by executive chef Guillermo Méndez on February 6. The appointment will allow the latter to dedicate more time to supervising the four restaurants of La Residencia, to continue raising its culinary offer, and become an ambassador of his gastronomic concepts both on and off the island.

Pablo was born and raised in Granada, where he began his academic training in the field of gastronomy, concluding it with a master's degree at the Basque Culinary Center. Involved in his family pastry shop since he was 14 years old, he acquired his professional experience both in restaurants and hotels, initially in Andalusia and later on in Mallorca. He arrived on the island at the hands of chef Marc Fosh, alongside whom he obtained the Michelin Star, and has subsequently worked in the kitchens of the award-winning Andreu Genestra and Fernando Pérez Arellano.

A great storyteller, Pablo will undoubtedly thrive to continue the sustainability efforts undertaken in recent years by La Residencia. Thus, El Olivo will keep its most popular classics on the menu, but will give them a new twist based on its unique creativity. Escaping fashion and trends, with the product always as the protagonist, the new chef will also create an innovative tasting menu, as well as dishes that will enrich the offer of Mediterranean haute cuisine.
